In this class, students will learn how to make
eclairs, a traditional French pastry filled with cream and topped with
chocolate. Students will learn how to make their own perfect choux pastry, pipe
it into the classic oblong shape, bake and then fill it with a delicious pastry
cream that they make in class. We will also cover techniques for making a rich
chocolate ganache to top the eclairs and a variety of additional toppings to customize
the flavors. Everyone will leave with the beautiful eclairs that they make in
